Vibrant Mediterranean Salad
Ingredients:
1 1/2 cups grape tomatos, halved
1 1/2 cups feta cheese
1 1/2 cups small-diced red onion
1 1/2 cups chopped Kalamata Olives
6 tablespoons olive oil
salt to taste
pepper to taste
1/4 cup chopped fresh basil leaves
1/4 cup chopped fresh parsley
1/4 cup chopped cucumber
Directions:
In a large bowl, place the halved tomatoes, then add the olives, onion, olive oil, salt, pepper, basil, parsley, chopped cucumber and toss or mix the salad well. Crumble the feta cheese on top and enjoy!
Berry Bliss Acai Bow
Ingredients
2 packs of frozen acai puree
1/2 cup frozen mixed berries (such as strawberries, blueberries, raspberries)
1 ripe banana, frozen
1/2 cup almond milk or coconut milk
Toppings: sliced bananas, granola, sliced almonds, shredded coconut, chia seeds, honey, chocolate chips
Directions
Place the frozen acai puree packs in the refrigerator for about 10-15 minutes to slightly thaw. This will make it easier to blend.
In a blender, add the slightly thawed acai puree, frozen mixed berries, frozen banana, and almond milk. Blend until smooth and creamy. If the mixture is too thick, you can add a little more almond milk to reach your desired consistency.
Pour the blended acai mixture into a bowl.
Top your acai bowl with sliced bananas, granola, sliced almonds, shredded coconut, chia seeds, and a drizzle of honey if desired.
Enjoy your delicious and nutritious acai bowl immediately with a spoon!
Fiery Thai Stir-Fry
Ingredients:
1 lb (450g) boneless, skinless chicken breasts or thighs, thinly sliced
2 tablespoons vegetable oil
3 cloves garlic, minced
1-2 red chili peppers, thinly sliced (adjust according to your spice preference)
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 onion, thinly sliced
1 cup broccoli florets
1 carrot, julienned
1/4 cup Thai basil leaves, loosely packed
2 tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon oyster sauce
1 tablespoon sriracha sauce (adjust according to your spice preference)
1 tablespoon brown sugar
Cooked rice, for serving
Lime wedges, for garnish (optional)
Chopped peanuts, for garnish (optional)
Fresh cilantro, for garnish (optional)
Instructions:
In a small bowl, mix together the soy sauce, fish sauce, oyster sauce, sriracha sauce, and brown sugar. Set aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the minced garlic and sliced chili peppers to the skillet. Stir-fry for about 30 seconds until fragrant.
Add the sliced chicken to the skillet. Cook, stirring occasionally, until the chicken is browned and cooked through, about 5-7 minutes.
Push the chicken to one side of the skillet and add the sliced bell peppers, onion, broccoli, and julienned carrot to the empty side. Stir-fry the vegetables for 2-3 minutes until they start to soften.
Mix the chicken and vegetables together in the skillet. Pour the sauce over the mixture and stir well to combine.
Continue to cook for another 2-3 minutes until everything is heated through and well coated in the sauce.
Remove the skillet from heat and stir in the Thai basil leaves until wilted.
Serve the spicy chicken Thai stir-fry hot over cooked rice.
Garnish with lime wedges, chopped peanuts, and fresh cilantro if desired.
